Poached macs, Burro al trote, and lots and lots of tarragon

Today my cousin came over for lunch. I hadn’t cooked for so long, and it was a joy to get the knives in gear again. This is what we made.

starter:

Poached apples in citrus, tarragon, allspice

The poached apple (citrus, tarragon) went on arugula with a chili oil vinaigrette.

main

Black bean burro filling (red wine, onion, thyme)

Burro al trote: a flour tortilla filled with black beans (red wine, thyme), sweet potato (black pepper, cinnamon) and sharp cheddar.

Oh, and a bit of salsa on the side.

Can’t have a burro sin salsa !
