Today my cousin came over for lunch. I hadn’t cooked for so long, and it was a joy to get the knives in gear again. This is what we made.
The poached apple (citrus, tarragon) went on arugula with a chili oil vinaigrette.
Burro al trote: a flour tortilla filled with black beans (red wine, thyme), sweet potato (black pepper, cinnamon) and sharp cheddar.
Oh, and a bit of salsa on the side.
